French Dessert Class in Sofia

Discover the finer points of pâtisserie in a French dessert class in Sofia dedicated to macarons, sponge cake and homemade ice cream. With guidance from Chef Nemigenchev, you will take an active role in the preparation, explore what makes each dessert work and taste your own creations. If you appreciate delicate flavours and want to understand how different textures are achieved, this class turns that curiosity into hands-on experience.

A closer look at French pâtisserie

French desserts are known for their refinement, precision and carefully balanced flavours. Behind their elegant appearance, however, are techniques that can be genuinely challenging. This class explores three different aspects of dessert making: delicate macarons, airy sponge cake and smooth homemade ice cream. If you have always wanted to understand how they are made, the session gives you the chance to work on them with a chef’s guidance.

French macarons: shape, shells and filling

These small almond-flour confections pair a delicate texture with a rich flavour and a soft cream filling. You will learn what to look for when shaping them, creating smooth shells and preparing a refined filling that melts in the mouth. Working on macarons introduces you to the details behind their beautifully finished appearance.

Sponge cake: lightness and an airy structure

Sponge cake provides the foundation for many elegant desserts. During the class, you will explore the finer points of making it and how to achieve a light, fluffy structure. You will learn how to avoid common problems such as sinking or drying out, with the aim of producing a tender, airy base for desserts.

Homemade ice cream: creaminess and quality ingredients

You will also explore how to make different types of homemade ice cream with a smooth, creamy consistency and a rich flavour. The class focuses on using high-quality ingredients without artificial additives. You will see how the ingredients and preparation methods come together in this frozen dessert.

How the hands-on class works

This is not a session where you simply watch a demonstration. Every participant takes an active part in the preparation and carries out tasks assigned by Chef Nemigenchev. The setting reflects a real working kitchen, including its pace and practical demands.

The class is suited to you if you are interested in cooking and willing to follow the chef’s instructions throughout the session. The planned duration is 4 hours. The actual finishing time depends on the participants’ pace, and the class may continue beyond its scheduled end.

Tasting and a safe working environment

At the end of the class, once preparation is complete, you will taste the desserts with the other participants. An alcoholic drink is served only at this stage. No alcohol is served during the practical work, helping everyone remain focused and keeping the working environment safe.
