Vegetarian Cooking Class for Beginners in Sofia
Description
Vegetarian Cooking Class for Beginners in Sofia
This vegetarian cooking class for beginners in Sofia is a chance to build confidence in the kitchen while making approachable yet refined main dishes. Preparing something delicious yourself and sharing it with others can offer much more than a successful recipe: it can bring pleasure, a sense of progress and a new outlet for self-expression.
No previous cooking experience is needed. The class welcomes anyone who wants to start cooking with greater confidence and discover the variety vegetarian food has to offer. Culinary curiosity meets recipes from different traditions, seasonal ingredients and rich, thoughtfully balanced flavours.
Essential techniques to practise yourself
The class goes beyond following individual recipes. You will explore different ways of preparing food and develop a more thoughtful understanding of how to handle ingredients. Techniques covered include sautéing, blanching, stewing, frying and baking.
You will also practise accurate knife work and learn to keep your workspace clean and organised. The aim is to combine practical skills with care for the ingredients, helping you make cooking a personal form of expression through flavour.
A menu of three vegetarian dishes
The selected recipes bring together different culinary influences and show how accessible ingredients can become dishes full of character:
- Gnocchi with basil pesto, walnut notes and Parmesan, combining fresh aromas with a full, savoury flavour.
- Melanzane alla parmigiana: meltingly tender aubergines with tomato sauce and cheese.
- Traditional cheese-filled gözleme, a comforting flatbread with roots that connect generations and cultures.
Hands-on cooking in a teaching kitchen
The class takes place in a welcoming teaching kitchen and is fully practical. Every participant actively cooks; this is not simply a chef's demonstration to watch from the sidelines. All ingredients and materials are provided. Bring your enthusiasm, an interest in cooking and a willingness to carry out the tasks set by the chef.
The format reflects a real working kitchen, including its pace and particular demands. The advertised duration is 180 minutes, but the actual length depends on how the group progresses, so the class may run longer. It is suited to you if you want to take an active part in preparing the food rather than only tasting the finished dishes.
Meet your instructor: Chef Nikolay Nemigenchev
Originally trained as a lawyer, Chef Nikolay Nemigenchev turned a childhood passion for food into a culinary career. He now leads cooking events in Bulgaria and abroad and has developed an innovative street-food business. His work demonstrates that street food can be both refined and high-quality.
He is an active member of the Association for Affordable and Quality Food and represents Bulgaria within SAFE Food Advocacy Europe, a European organisation working towards a more transparent and sustainable food system. His farm-to-table philosophy is a practical direction for his work and his commitment to change, rather than simply a slogan.
