Pastry Class in Sofia: The Foundations of Great Desserts

Discover what makes a dessert work in a pastry class in Sofia where you do more than watch: you make, taste and understand. Over approximately three hours, you will explore professional pastry-making through two essential recipes, crème pâtissière and crème Chantilly. These are skills you can return to whenever you make desserts at home and want a finer texture, a better balance of flavours and a more accomplished result.

Led by Miglena Petrova, the class takes you back to the foundations: not simply which ingredients to combine, but why they work together and how each stage affects the finished dessert. You will explore the principles behind these creams, work with different consistencies and build the confidence to use what you learn beyond the recipes covered in class.

Crème pâtissière: a building block of classic pastry

Pastry cream plays an essential role in éclairs, profiteroles, tarts and cakes. During the class, you will learn how the proportions of milk, egg yolks, sugar and starch determine its smooth, velvety texture. You will discover how to prevent curdling and achieve a stable cream without compromising its flavour.

You will also explore flavouring it with vanilla, citrus and other ingredients. Rather than treating the recipe as fixed, you will learn how to adapt it to its purpose: a firmer consistency for fillings, or something lighter and airier for creamy layers. This gives you a way to choose your technique according to the dessert you want to create.

Crème Chantilly: lightness achieved through technique

Chantilly may start with whipped cream, but careful preparation turns it into a delicate, airy cream with a beautifully fine texture. You will learn to recognise the right point to stop whipping and to balance sweetness with stability. These seemingly small decisions are what separate ordinary whipped cream from a well-made Chantilly.

You will discuss how to serve it on its own and how to combine it with other creams to build more elaborate desserts. You will also see how both foundational recipes can be developed further: in mousses, in creams with added texture and as starting points for more advanced pastry techniques.

Understand the process, not just the recipe

With Miglena Petrova's guidance, you will follow the whole process, from choosing quality ingredients and working at the right temperature to making the final adjustments to flavour and consistency. She will explain common mistakes that can make these creams difficult to get right and practical ways to avoid them. Her professional tips are intended to help you improve your desserts while using your time in the kitchen more effectively.

Miglena brings extensive experience gained through years of practice and training both in Bulgaria and abroad. Her teaching combines precision, attention to detail and clear explanations, helping you put your new knowledge to use the very same day. Her approach is built on the belief that a good dessert starts with understanding a technique, rather than simply following a sequence of written instructions.

Theory and practice support each other throughout the session. You will work, experiment and see how these core creams can be used in different desserts. The aim is to leave with more than two recipes: you will have a foundation you can build on, whether you want to explore new combinations or develop dessert ideas of your own.

Hands-on learning in a working kitchen environment

Every participant takes an active part in the cooking. This is not a demonstration-only class. The session recreates a real working environment, with its own pace, demands and practical tasks. It is recommended for people with an interest in cooking who are ready to follow the chef's instructions and carry out the tasks set during the class.

The advertised duration is three hours, but the pace of the participants can affect the running time. The class may finish later than scheduled, so allow for that possibility when planning the rest of your day.
